Re: Cooking in the Can.
Serious question Dane. Have you used or tried any of the soy based meat replacements that are out now? And what do you think of them? It's actually something that has been around for a long time. I remember trying a soy based burger years ago and thought it was not very good. Is the new stuff more than just marketing crap?

I have come across some burger patties that are ‘decent’
While they have a good flavour and texture, it still lacks that extra something. I think it’s ‘Beyond Beef’ or Beyond Meat .... though ‘beyond’ seems to be the moniker du jours.
It’s funny though.... they’ll still contain some egg as a binder. And from a nutrition perspective they tend to have more of the questionable stuff.
The kind of places I work, veggie options tend to sell at about 10% or less. I’ll sell 10-20 beef patties before I’ll sell 1 veggie.
The borough I live in has a larger than average vegan restaurant ratio.... there small and trendy.
Maybe not more popular.... just More accepted.
Personally, if designing a vegetarian menu, I’d try to stick with ‘whole’ foods and try to avoid the processed ‘marketed’ stuff.
In short, They add to the variety when it comes to options.... but I wouldn’t make it a lifestyle.

Re: Cooking in the Can.
Our goto at home, for a veggie sandwich, was always a big slice of portobello mushroom, cooked up and maybe some type of cheese.Lasagna Pirate wrote: Sun Nov 29, 2020 11:46 pmMy participation in the food service industry has been patchy this last year.... butTrobador222 wrote: Sun Nov 29, 2020 8:29 pm

I've gone sort of semi-veggie mainly for reasons of avoiding food-poisoning with my shit culinary skills. Only meat I eat really these days is in ready meals.

It's ok, I'm specially evolved for a high-fat, high-salt low-vitamin diet. :pTrobador222 wrote: Tue Dec 01, 2020 5:52 pmThats usually got high salt and preservatives in that stuff.
